Veggie Curry Recipe

Ingredients: 

  • 1 tin coconut milk
  • 1 tin chickpeas
  • 1 sweet potato, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tomatoes, diced
  • 2 tsp garam masala
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • Fresh coriander

 

Instructions: 

  • Lightly brown onions over high heat, then add peppers and sweet potatoes and spices, stir well for a minute before pouring in the coconut milk.
  • Cover and let simmer on low/medium low heat for at least 30 minutes. Taste and season with salt as necessary.
  • About 10 minutes before eating, stir in your chopped tomatoes and a handful of chopped coriander.
