Ingredients:
- 1 tin coconut milk
- 1 tin chickpeas
- 1 sweet potato, diced
- 1 bell pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 2 tsp garam masala
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp turmeric
- Fresh coriander
Instructions:
- Lightly brown onions over high heat, then add peppers and sweet potatoes and spices, stir well for a minute before pouring in the coconut milk.
- Cover and let simmer on low/medium low heat for at least 30 minutes. Taste and season with salt as necessary.
- About 10 minutes before eating, stir in your chopped tomatoes and a handful of chopped coriander.
